Recipe: Taco Shirataki Noodle Casserole
Ingredients
1 pound lean ground beef … ( replaced with 12 oz of Meatless Ground )
1 packet taco seasoning mix
1 tablespoons butter … ( ommitted the butter ??? vegan rules )
1 large onion, chopped
1 large green pepper, chopped
18 oz two 9 oz packages Shirataki Noodles
1 can of Fire Roasted Tomatoes
1 jar chunky salsa … I used have a jar of Pace Picante
2 cups cheddar cheese, grated ( skipped this vegan rules )
Instructions
In a large skillet, saute onions and peppers (if desired) a bit of water until tender.
Add meatless ground …
Add taco seasoning spices as directed on the package, blend, and reserve.
Meanwhile, rinse and drain the Shiratki Noodles under warm water. Pat dry with paper towels .
In a 9X13″ baking pan, spoon 1 can Fire Roasted tomatoes into the bottom of pan to cover.
Layer remaining ingredients in the following order: noodles, meat mixture, salsa, and cheese.
Repeat layering process until dish is full, making sure to finish the top layer with cheddar cheese.
I messed up the layering process…
Bake in a pre-heated 400 degree oven for 25 to 30 minutes.
Remove from oven and let stand for about 5 minutes.
Serve warm.
Now how did it taste??? it’s ok but not great.
… I just do not know how to Shirataki noodles …
The meatless ground, taco seasonings, onions and peppers are ok .
